ONE PASTRY RECIPE - 3 EASY CHRISTMAS PARTY TREATS

When it comes to pastry we know the temptation to buy it pre made off the supermarket shelves is strong. We’ve definitely done it! But have you ever tried our recipe pastry made with rapeseed oil. The first time we made it we couldn’t believe how easy it was.

So what do you need to make pastry with rapeseed oil?

The pastry ingredients

  • 2½ tbsp littleseed extra virgin British rapeseed oil

  • 200g Plain Flour

  • Pinch of Salt

  • 1 egg (+1 more for glazing if required)

  • 3½ tbsp cold water

Then simply whisk the wet ingredients together in a bowl and then add the dry, Combine together et voilà!

No chilling or resting of the pastry required, just roll it out and get cooking.

Mini Cheesey Leek Pasties

These are great way to use up leftover cheesey leeks from Christmas dinner. Simply cut out a pastry circle and fill with a heaped teaspoon of cold cheesey leeks. Fold the pastry case in half and then pinch it together around the outside edge to create a pasty. Brush the pastry with egg then bake in the oven until golden brown.

Pigs in Pastry

Another great way to use up those Christmas day leftovers. Cut out a pastry circle with a biscuit cutter. Add a blob of cranberry sauce, followed by a thin slice of stuffing and then a mini pig in a blanket (sausage wrapped in bacon) then wrap the pastry circle around the outside of the sausage. Brush with egg and bake until the pastry is golden brown.

Mince Pie Parcels

A fun twist on tradtional mince pies. These mince pie parcels are a delicious bite to have on your Christmas party buffet table. Roll out your pastry and cut it into equal sized squares. Add a spoonful of mincemeat, plus some chopped fruit to a pastry square, top with another pastry square, crimp the sides together and cut a slit in the top of each pastry parcel. Brush with egg then bake in the oven until golden brown. Dust with icing sugar and enjoy.
