Mince pie parcels

These mince pie parcels are a yummy twist on a Christmas classic.

Makes 8

Ingredients

For the pastry

  • 200g Plain Flour

  • Pinch of Salt

  • 2 eggs (one for the pastry, one for glazing)

  • 3½ tbsp cold Water

    For the filling

  • A jar of mincemeat

  • A cooking apple, peeled and diced

  • A clementine, peeled, segmented and chopped

  • Icing sugar for dusting

Method

  1. To make the pastry beat together the rapeseed oil, water, and egg. Add the flour and salt to the wet ingredients until it forms a soft dough.

  2. Roll out on a floured surface to 3mm thick. Using a knife slice into an even number of 3x3 inch squares.

  3. Preheat oven to 200C/Gas Mark 6

  4. Add two heaped tsps of mincemeat to the centre of half the squares. Then on top of the mincemeat sprinkle on a few pieces of apple and clementine.

  5. Place one of the remaining pastry squares on top of the filled pastry square, then using a fork crimp the edges of all four sides until they are sealed.

  6. Use a sharp knife to cut a slit in the top of each parcel

  7. Transfer to a lined baking tray and bake in the oven for 15 minutes

  8. Remove from the oven and set aside to cool

  9. Dust with icing sugar and enjoy.
