Good things crumb to those who bake

There are not a lot of things in the world more satisfying than sitting down to enjoy a hot drink with a biscuit.

Biscuits are a favourite here at littleseed and so it was no surprise to us to find out that this deliciously sweet and compact snack has a whole day set aside in its honour.

National Biscuit Day, which is celebrated on May 29th annually, is a day to appreciate the humble biscuit and all its various types and flavours.

And while we’re not adverse to picking up a packet of biccies from the supermarket (shoutout to all the bourbon biscuit fans) what we really love is a batch of homemade biscuits and of course it wouldn’t be us if we weren’t pouring a good glug of littleseed into our biscuit mix.

Can you really replace butter with oil in a biscuit recipe?

While a lot of recipes call for butter or lard it is absolutely possible to make biscuits with cooking oil too.

Cold pressed rapeseed oil can be used to replace butter altogether in a biscuit recipe or you can use a combination of part butter/part oil.

Why is oil great for making biscuits?

Cold pressed rapeseed oil is ideal for making biscuits, and the great news is it is a healthier alternative to other oils like olive oil (rapeseed oil has half the saturated fat olive oil) and more traditional fats like butter (rapeseed oil has around a tenth of the saturated fat of butter).

Another bonus is that rapeseed oil can also be more budget friendly too.

is a cookie the same as a biscuit? We aren’t going to engage in that type of debate, but we can confirm that these chewy chocolatey numbers are great with a cup of tea.

Not dissimilar to the Anzac biscuit popular in Australia and New Zealand, these oat and coconut biscuits are incredibly moreish and you may find the biscuit tin gets emptied rather quickly.

These very delicious but crunchy spiced biscuits just taste of the festive season. Store them in an airtight tin and they will keep for a very long time. You can even thread a ribbon through them and hang your Christmas tree.
