Regen cheese toastie
Makes two sandwiches
Ingredients
Four slices of regeneratively farmed bread
Half a red onion - diced
1 x Organic Tomato - sliced
2 x tbsp mayonaise
Method
Make a cheese savoury by mixing the grated double gloucester, mayo and onion.
Lay two slices of the bread on a plate or chopping board and divide the cheese savoury between the two slices.
Lay 3 to four slices of tomato on top of the cheese savoury.
Lay the remaining bread on top of the cheese savoury topped slices and sandwich together. .
Place a large frying pan over a medium heat.
Pour a small amount of cold pressed rapeseed oil into a small bowl and using a pastry brush, brush one side of each sandwich with oil.
Place the sandwiches oil side down in the hot pan and press the sandwichs down firmly with a spatula.
Brush the other side of the sandwiches with oil.
Flip the sandwiches over in the pan and press down again.
When the filling is oozing and melting and the outside of the toasties are golden brown, take them out of the pan, slice and serve.
