Regen cheese scones

Ingredients

·       60ml Naturally Cold Pressed Rapeseed Oil

·       250g regenerative plain flour

·       2 tsps baking powder

·       1 tsp dried thyme

·       ¼ tsp salt

·       130ml regenerative or organic milk plus extra for glazing

·       120g Golden Hooves Red Leicester

Method

  1. Preheat the oven to 200C / Fan 180C / Gas Mark 6.

  2. Line a baking tray with baking paper.

  3. Grate the cheese

  4. Mix the flour, baking powder, salt and thyme and 100g of cheese together in a bowl. Add the oil to the milk and mix everything together to form a soft dough.

  5. Turn the dough out onto a floured surface and gently shape the dough until it's about 2cm thick.

  6. Using round pastry cutter, cut out the scones and place them on the lined baking tray.

  7. Gathet together the and trimmings and reshape to make more scones, while being careful not to overwork the dough.

  8. Brush the top of each scone lightly with milk, sprinkle with a pinch of the remaining cheese and bake in the oven for about 20 minutes until risen and golden.

  9. Remove from the oven and place on a wire rack to cool before serving.

  10. Serve warm with butter or with a slice of cheese and chutney.
