Nasi goreng - indonesian fried rice topped with a fried egg

Friday night fakeaways don’t get much quicker or tastier than this yummy fried rice dish. A great way to pack in those fresh veggies along with loads of flavour.

Serves 2

Ingredients

  • 3 tbsp littleseed Spicy stir fry oil

  • 1 x onion (finely sliced)

  • 1 x carrot (grated)

  • 1 x courgette (finely sliced)

  • ½ savoy cabbage (shredded)

  • 1 x cup of rice

  • 1 x tbsp fish sauce

  • 2 x tbsp soy sauce

  • 2 x eggs

  • 1 x lime (juiced)

  • A handful of fresh coriander

  • Sriracha chilli sauce

Method

1.            Cook the rice as per the instructions on the packet. Once cooked strain and set aside.

2.            Heat 2 tbsp of stirfry oil in a wok or frying pan over a high heat. Add the onion and cook for 3-4 mins until softened then add the in the carrot, courgette and cabbage, cook for 1-2 mins.

3.            Add the rice and stir to warm through. Pour in the fish sauce, soy sauce, lime juice and season with salt and pepper.

4.            Transfer the rice to warmed bowls

5.            Return the wok or frying pan to the heat, add the remaining tbsp of stirfry oil and fry the eggs until the whites are set.

6.            Top each bowl of rice with a fried egg, scatter on some coriander leaves and drizzle with sriracha sauce.

Top tips

1.       Hate food waste? This is a great way to use up leftover cooked rice. - Just make sure it is heated through thoroughly.

2.       Short on time? Use a food processor to chop your onion, carrot, courgette and cabbage.
