bang bang cauliflower

This is a great veggie alternative to Bang Bang Chicken. Not only is it delicious but cauliflower is also high in vitamins C and K, and is also a good source of folate so it’s rich with goodness. This recipe can be made in the air fryer or baked in the oven. We love how quick it is to cook using the air fryer though.

Serves 2

Ingredients

  • Littleseed Extra Virgin rapeseed oil

  • A whole head of Cauliflower - broken into smaller florets

  • 60g plain flour

  • 1 tsp paprika

  • 1 tsp garlic granules

  • 100ml milk (dairy or non-dairy)

  • 75g panko breadcrumbs

    1 tbsp sesame seeds

    1 red chilli, finely sliced, to serve

    4 spring onions, finely sliced, to serve

    For the sauce

  • 5 tbsp sweet chilli sauce

  • 1/2 lime, juiced

  • 1 tsp maple syrup

Method

  1. Preheat the air fryer to 200C

  2. Break your cauliflower up into small florets. If the florets are naturally qute large, use a knife to split them into smaller pieces.

  3. Add the flour, paprika, garlic granules to a large bowl. Add the milk and gradually whisk in the milk until you have a smooth batter.

  4. Put the panko breadcrumbs in a shallow bowl. Coat each cauliflower floret in the batter mix, tap off any excess, then roll in the breadcrumbs to coat. Transfer to a lined airfryer basket and repeat with all the cauliflower florets.

  5. Drizzle 1 tbsp of cold pressed rapeseed oil over the coated cauliflower florets

  6. Cook in the air fryer for 20 minutes or until the breadcrumbs are golden brown. Take the basket out and give the florets a shake half way through cooking.

  7. While the cauliflower is cooking put all the ingredients for the sauce in a bowl and whisk to combine.

  8. Slice the chilli and spring onions

  9. Put the cooked cauliflower in a large bowl and pour over the sauce until they’re all coated.

  10. Sprinkle on the sesame seeds and top with the sliced chilli and spring onions

Recipe Notes

If you don’t have an air fryer don’t worry you can still make this delicious dish. Just place the coated cauliflower florets on a lined baking tray and cook for 25-30 mins in a oven preheated to 200C/Gas Mark 6. As with the air fryer method take them out half way and give the tray a shake.
