Mini Christmas Pudding Tiffin Bites

Bitsized christmas pudding tiffin balls

These no bake xmas pudding tiffinballs are the perfect sweet treat for the festive season.

Ingredients

  • 200g plain chocolate

  • 2tbsp golden syrup

  • 40ml littleseed extra virgin British rapeseed oil

  • 200g digestive biscuits – crushed

  • 50g raisins

  • 100g white chocolate

  • 100g marzipan (you can use regal icing if you don’t like marzipan)

  • Red and green food colouring

Method

  1. Crush biscuits in a bowl to crumbs and add the raisins.

  2. Melt the chocolate with oil and syrup in a bowl over a pan of hot water.

  3. Pour the dry ingredients into the chocolate mixture. Mix and allow to cool for 30 mins.

  4. Take a heaped desert spoonfuls of the mixture and shape into individual balls. Place them on a tray and put in the fridge to set for 1 hour.

  5. Divide the marzipan into two equal pieces. Add green food colouring to one and red to the other. Knead the two pieces of marzipan until the colour is evenly spread through each piece.

  6. Roll out the green marzipan to 2mm thick and cut out small triangle or diamond shapes (about 1.5cm in length). These will be your holly leaves so you will need to cut out twice as many, as you have pudding balls.

  7. Next take tiny pieces of the red marzipan and roll into balls. These will be your holly berries so you will need 3 per mini pudding.

  8. Melt the white chocolate in a heat proof bowl and then add ½ a tsp of melted white chocolate to each pudding ball, while the chocolate is still soft add two marzipan leaves and three holly berries to the top of each pudding ball.

  9. Leave to set in the fridge for 30 minutes

Recipe notes

If the white chocolate has already set hard, don’t panic you can use a bit of apricot jam or water and icing sugar as glue to stick the berries and leaves to the top of your puddings.
