Apple & Cinnamon Muffins
120ml Littleseed Rapeseed Oil
175g self raising flour
175g caster sugar
3 large eggs
1 tsp ground cinnamon
2 apples, peeled, cored and cut into small chunks
Heat the oven to 200C / Fan 180C / Gas Mark 6
Put non-stick muffin cases into a muffin baking tray.
Put all the ingredients except for the apple chunks into a large mixing bowl and beat them together to make a golden batter. Sir in the apple chunks then put the mixture into the muffin cases.
Bake for approx 25 minutes until golden. Remove from the oven and take out of the muffin tray to cool.
Good to Know!
For a dairy-free option, omit the milk and use 175ml of Littleseed Rapeseed Oil
